I made a kind of flauta/chimichanga hybrid tonight with flour tortillas and extra sharp cheddar. Messy as hell, but tasty dipped in salsa and full-fat Greek yogurt.
Thanks for the suggestion. I make calzones all the time. Always looking for new filling ideas.
